Low Carb Baked Ricotta Cakes

Serves 4 – around 3 carbs per serving
1 cup ricotta cheese
2 egg whites, beaten
1/6 🙂 cup DaVinci’s simple sugar-free syrup
1 tsp vanilla
Preheat oven to 350 degrees
Place the ricotta cheese in a bowl and break it up with a wooden spoon. Add the beaten egg whites, syrup, and vanilla and mix thoroughly until the mixture is smooth and well combined.
Lightly grease four Pyrex bowls. Bake for 20 minutes, or until the ricotta cakes are risen and golden.
Serve warm or chilled. We add some berries or a little sugar-free jam for toppings.
