Low Carb Cheese Pie
2- 8 oz. of cream cheese-creamed
3-eggs- add on at a time and cream well
sweetener to = 2/3 c. sugar (we use liquid stevia)
1 tsp vanilla (make sure it’s carb free)- add and beat 5 minute.
Pour into a 9″ pie pan (deep dish)
Bake at 325 degrees for 50″.
Cool for 20″ on a rack.
Make the topping.
1 pint (16 oz) sour cream (we use Daisy brand) sweetener to = 1/2 c. sugar
1 tsp. vanilla (make sure it’s carb free)
When pie has cooled pour on top and bake an additional 15 minutes. Let cool on a
wire rack and then cover and refrigerate.
We have some special flavorings from complany called “Bickford” that are carb free and we have used them to flavor our cheese pie.
We have also used coco powder, which may contain a few carbs, but I use “Equal Exchange Brand” with 2 gm carb and 2 gm fiber so it’s = to 0 carbs, Just make sure you check, but we mix this with 1/2 of the cheesecake batter and maybe key lime flavoring to the other have and have a deluxe dessert that everyone wants. It can be any flavor.
We figure that 1/8 of this pie = 2 gm carbs.
Because it’s so high in fat, it’s one of the thing that helps keep my daughter in ketosis.
