Low Carb Cucumber Cheese and Olive Platter

Ingredients:
Cucumbers
Cheddar cheese
Butter
Olives.

Peel a cucumber. Run a fork along the sides to create a ridge pattern, then slice the cucumber in thin slices and arrange on a platter. Add a thin slice of mild cheddar to each cucumber slice, then top with a small sliver of cold butter. Top the butter with a slice of green olive. This is finger food. Serve cold so the butter doesn’t melt. Simple but delicious snack.
