Low Carb Party Snack Mix

Ingredients:

1/2 cup Arrowhead Mills Puffed Corn Cereal
1/4 cup Roasted/Salted Peanuts (we use Trader Joe’s)
2 TBSP butter
1/8 tsp. cinnamon
Dash black pepper
A few drops of soy sauce
1/8 tsp. powdered 100% stevia, or to taste
Very tiny dash cayenne (according to tolerance)

In a small saucepan, melt the butter on medium heat. Add the corn puffs and stir.
Add all other ingredients and stir occasionally, for about five minutes.
Adjust tempature if needed so corn puffs don’t burt but get lightly cooked.
Pour into container to cool.

This is great in a lunchbox!

This makes 2 servings, 3.5 grams net carbs each.
