Low Carb Potato Chowder

1 large package of frozen cauliflower.
I clove of garlic
put it into a large saucepan and add enough chicken broth to cover
the florets.

Once it starts to boil let it boil for 15 minutes till the cauliflower
is very tender.

While the cauliflower boils fry 5 slices of bacon and reserve the fat.
Remove the bacon and set aside.
Sautee 1/2 a small onion in the bacon fat.

Once the cauliflower has boiled use a slotted spoon to remove it and
the garlic from the broth and process this in a food processor or
blender along with 3 oz of cream cheese, 1 tablespoon butter, and
several large 1 inch blocks of sharp cheese and any other favorite
zero carb cheeses Parmesan and provolone were what I added – it will
look almost orange. Process the mixture till it’s very smooth then
return it to the chicken broth. Crumble the bacon and add that to the
mixture. Bring this to a nice simmer and add salt & pepper or Mrs.
Dash, and /or Adobo.
