Lemon Caper Salad Dressing

3T freshly squeezed lemon juice (3.9g)
1 clove garlic, minced (0.9g)
2T capers, finely chopped (0.2g)
1T caper juice from jar
1/2c good fruity olive oil

Place garlic into processor bowl. Mince. Add capers. Mince. Add lemon juice & caper juice. Process. With processor running, add oil slowly through feed tube, blending well. This keeps well in a jar in the refrigerator for at least two weeks.
