Peanut Butter Muffins
*Makes 3 servings for 150 kcal snacks!

13 gm Skippy Peanut Butter
32 gm butter
17 gm egg white
17 gm egg yolk

Spray a miniature muffin/tart pan with Pam. Separate the yolk from the white of the egg. Whip the egg white until it is fluffy and measure allotted amount. Fold in allotted egg yolk. Melt butter with the peanut butter. Blend the melted butter and peanut butter with the egg mixture. Spoon it into the pan to make 9 little mini muffins. Bake at 350 for 10-15 minutes. Take them out and let them stand until the butter gets absorbed into the muffins. One serving equals 3 muffins (which equals one 150 kcal snack).

For a variation you could try setting a little butter from the recipe aside, mix it with vanilla extract and a few drops of saccharin, and spread it on top of the muffins for Keto icing.
