Tammy’s Low Carb Baked Ricotta Cakes

  • 1 cup ricotta cheese
  • 2 egg whites beaten
  • cup sugar-free syrup
  • 1 tsp vanilla


  • Preheat oven to 350 degrees F.
  • Place the ricotta cheese in a bowl and break it up with a wooden spoon
  •  Add the beaten egg whites, syrup and vanilla. Mix thoroughly until the mixture is smooth and well combined
  • Lightly grease four small ramekins or use a greased muffin tray
  • Bake for 20 minutes, or until the ricotta cakes have risen and are golden brown


Great served either warm or chilled. We add some berries or a little sugar-free jam for toppings.
