Tammy’s Low Carb Baked Ricotta Cakes
- 1 cup ricotta cheese
- 2 egg whites beaten
- ⅙ cup sugar-free syrup
- 1 tsp vanilla
Preheat oven to 350 degrees F.
Place the ricotta cheese in a bowl and break it up with a wooden spoon
Add the beaten egg whites, syrup and vanilla. Mix thoroughly until the mixture is smooth and well combined
Lightly grease four small ramekins or use a greased muffin tray
Bake for 20 minutes, or until the ricotta cakes have risen and are golden brown
Great served either warm or chilled. We add some berries or a little sugar-free jam for toppings.
