Low Carb Chicken Alfredo

Served on Spaghetti squash

• Coat 4 boneless breasts of chicken with salt, pepper and Italian seasoning
and fry them in a frying pan
• Cook spaghetti squash (quartered) in a separate frying pan for 20 minutes
• Chop a half head of broccoli, microwave with water (glass dish) 8 minutes

To create the Alfredo Sauce:
In a pot on stove cook:
1 stick butter, melt in a pot

Add 8 ounces of cream cheese
1 tsp garlic powder5
1 clove garlic pieces (out of jar)
whisk the cheese stuff until it is smooth

Then add
1 C heavy cream and ½ C water
and keep whisking; should have a smooth texture

Then add
½ C Parmesan Cheese (from jar)
3 to 4 ounces of regular Parmesan Cheese
1/8 tsp black pepper

Keep stirring until it gets mixed in (about 5 minutes to completely melt)

Put finished dish together:

• Cut up the chicken into chunks
• Cook the vegetables in microwave
• Put chicken into the Alfredo sauce and simmer
• Drain spaghetti squash
• Flake out strands with a fork
• Put butter on the spaghetti and coat with the broccoli and Alfredo sauce
