Low Carb Bite Sized Chicken Cheese Steaks

My teenage son Chris invented this recipe for his brother Jordan. It’s one of Jordan’s top hits.

Chicken breasts
Bacon fat
Grated mozzarella cheese
1 beaten egg
(Optional: oregano)

Cut up skinless chicken breasts in bite size pieces. Fry in bacon fat until thoroughly cooked. Beat an egg and pour over chicken mixture while bacon fat is still very hot. Add grated mozzarella cheese and mix through the chicken mixture with a spatula. This forms a crispy cheese coating on the chicken. Add salt (if needed) and pepper to taste, with optional oregano. Serve hot on a platter with tooth picks as party food. This also works for whole chicken breasts, though it is harder to coat the chicken with the mixture.
