Ingredients
- 4 eggs separated
- 1/2 tsp. salt
- 2 tbsp. cottage cheese
Instructions
-
Preheat the oven to 300C/150F.
-
Separate the eggs and whip the whites with the salt until peaks form.
-
In a separate bowl, mix together the egg yolks and cottage cheese.
-
Fold the yolk/cheese mixture into the whites, being careful not to over-mix or break down the froth of the whites, it’s okay if a few streaks of egg yoke remain visible.
-
Spray a cookie/baking tray with the PAM
-
Mound the batter onto the tray in 6 equal portions, forming large circles about the size of a saucer, slightly flattening the top of each mound.
-
Bake for 30-40 minutes until browned. They will spread and probably touch.
-
Remove from cookie sheet immediately and cool on wire racks.
I was super excited to try this recipe but I must have done something wrong. It basically turned out like a very thin omelette. Still tasty but definitely not bread like. Would love to know what I did wrong. Thanks!
You need to be careful not to over mix and make sure that the whites are really well whipped. I made this and it was great for sandwiches but it does tend to puff up in the oven and then flatten once it’s been taken out for a while.
