Mike’s Low Carb Macaroni and Cheese

  • One bag frozen cauliflower cooked
  • 3 ounces cream cheese
  • 4 tablespoons heavy cream
  • 1 ½ cup grated cheddar
  • ½ cup grated parmesan cheese


  • Preheat oven 350 degrees fahrenheit / 180 degrees celsius.
  • Pour 2 tbsp cream in bottom of baking dish and add a handful (½ cup) of cheddar cheese.
  • Place 2 tbsp cream, cream cheese and remaining cheese in microwave safe dish and microwave, stirring every 30 seconds or so, until all can be mixed together easily.
  • Pour drained cauliflower into baking dish (while cauliflower is still hot).
  • Pour cheese mixture over and stir well to mix.
  • Sprinkle the Parmesan over the top.
  • Bake for 35 minutes until cheese is browned on top
  • Allow to stand few minutes before eating/serving.


Optional: Top with some Italian seasoning.
Servings: 2 as a main, 4 as a side | Total carbs 10 net
