Mike’s Low Carb Macaroni and Cheese

Ingredients

  • One bag frozen cauliflower cooked
  • 3 ounces cream cheese
  • 4 tablespoons heavy cream
  • 1 ½ cup grated cheddar
  • ½ cup grated parmesan cheese

Instructions

  1. Preheat oven 350 degrees fahrenheit / 180 degrees celsius.
  2. Pour 2 tbsp cream in bottom of baking dish and add a handful (½ cup) of cheddar cheese.
  3. Place 2 tbsp cream, cream cheese and remaining cheese in microwave safe dish and microwave, stirring every 30 seconds or so, until all can be mixed together easily.
  4. Pour drained cauliflower into baking dish (while cauliflower is still hot).
  5. Pour cheese mixture over and stir well to mix.
  6. Sprinkle the Parmesan over the top.
  7. Bake for 35 minutes until cheese is browned on top
  8. Allow to stand few minutes before eating/serving.

Recipe Notes

Optional: Top with some Italian seasoning.

Servings: 2 as a main, 4 as a side | Total carbs 10 net
