Mike's Low Carb Faux Fried Rice

Course Side Dish

Ingredients
  

  • 1 head of fresh cauliflower
  • 3-4 green scallions
  • Zero carb soy sauce
  • 1 egg
  • Olive oil for cooking

Instructions
 

  • Grate the cauliflower until it resembles rice.
  • Saute 3-4 green scallions in olive oil until lightly cooked.
  • Add the grated cauliflower and saute until cooked through.
  • Add 3 tablespoons of zero carb soy sauce and mix through in the pan.
  • Beat the egg separately and then add to the pan, mixing it through the rice until cooked.

Notes

You can use frozen cauliflower although we always recommend fresh for the best texture. Do not use pre cooked cauliflower. Please carefully check the label of your soy sauce to make sure that there are no carbs, brands vary widely.
We suggest pairing this with some fried chicken.
