Low Carb Spaghetti Squash “Noodles”

Microwave a spaghetti squash for 2 minutes until it’s easier to cut it in half.  Scoop the seeds out***, and bake it face down for 40 minutes at 350 degrees.

You then scrape it out with a fork.

We’ve stirred those “noodles” in with a half cup of Parmesan (more is actually better, but then the carbs go up), and a stick of melted butter. How much depends on how big the squash is.

You could also do the Parmesan/butter mix with Broccoli as well.

If I figured the carb count right,
a 1/2 cup of the squash with the Parmesan is 4.2 carbs
and a 1/2 cup of the broccoli with Parmesan is 2 carbs.

*** You can oil & salt the seeds and also bake them at the same time as the squash for 15-20 min at 350F degrees – Yummy snack, too.
